Yes! It would be incredible. I would happily watch a 20 episode series that's just, like, Story Time With the Old guard, they wouldn't even have to film all the historical re-enactments (though those would be fabulous too), I would be content just to watch them wandering around the location of the week telling stories about it.
Anywhere except Venice. I have a random head-canon that the one thing Nicky has never gotten over is Genoa's rivalry with Venice, so you can bring up literally any other location in the world that he's spent a decent amount of time in and get beautiful stories about the people and the architecture and the history and all that, but mention Venice and you get a rant about some 14th century trade dispute that literally no one else on earth still cares about. Joe loves Venice but you have to get him alone if you want to hear about it without Nicky constantly interrupting to complain about how they make risotto or point out how bad the canals smell in the summer or insist that everything in the Piazza San Marco is a shoddy imitation of the forms it's inspired by.
